Mark,
Actually all the toques you have been told about here are nothing like a real French toque. Toques came in single toques and double toques. Neither of these toques have/had a tassel on top. The double toque looks like a deflated football laid flat. Half of the toque was pushed up inside the other half and then placed on the head.
If you are interested in a real French toque, go to http://frontierfolk.net/phpBB/viewforum.php?f=25&sid=979de8249563366453e4dbcf31bf7bff or http://www.historicaltrekking.com/forums/viewforum.php?f=1&sid=19b4b6171d866f644c5aac46cebc3d7f and ask your question there. Someone will tell you how to contact Issac Walters, whose wife makes quality single and double French toques.

Click on knitting, then Packet II to buy a pattern for an authentic double touque. Then find a knitter, or learn yerself.

Hillary Walters toques are top rate .But i am not sure if she is still doing them.Never hurts to ask, As per the other tuques, perform a" beanyectomy"The tassles are a modern thing.A good one will be knitted clean to the top, pretty plainly,As to color, red is most commonly documented in the 1700's",natural" is mentioned in the 3rd. quarter of the 1700's with blue being common in the early 1800's.
But do what you want ;D
