Any good tutorials out there for basic carving of shells, beavertail, etc.

Dave Person has done several that help a builder understand how to shape the stock first then the carving flows from that. There are rare exceptions (some fancy Hudson Valley fowlers have very high carving in a few places) but  shaping is key. Get some GOOD scrap wood and practice it. That is the best way t oigain confidence.
