cowhide ?

Was looking at some hair-on cowhide remnants at the local Tandy not too long ago, and all of them had the leather a light gray color. I want to make a bag with the hair still on the flap, but don't want light gray leather peaking thru if/when it starts to wear.

1. Is there a place that sells hair-on cowhide that doesn't have the light gray undeside?

I have not seen any. I think it has to do with not affecting the hair color.

I guess I could get a remnant that is larger than what I need and try some walnut dye to see if it will darken the leather some.

  The gray is from being chrome tanned. All you have to do is dye it on the flesh side, with most any leather dye. Oil dye is probably best, but spirit dye will do about the same.

 Have you checked to see what "The Leather Guy" has?  He has had some nice looking hair-on leather at times.
