Any good videos out there showing how to carve the area around the lock such as the beavertails and area in front of the lock ?

Wallace Gusler did a great video that is sold by American Pioneer Video's. I think Hershel has made one, I think there are several out there that have been done by a good number of the better know builders.

The hard part is shaping the lock panel, not carving the moulding/beavertails.    Are you really asking about how to properly shape the lock panels?    If so,  a really good video doesn't come to mind except for, perhaps, Hershel House's basic building video.
