Shellac will make a good sealer and filler too I suspect. Though I only have it on excellent authority no experience.
But it should be made is small batches for flakes etc not the store bought in the can stuff. Or so I am told.
Heavy bodied oil works so well I have pretty much quit looking though I suspect that a medium bodied oil varnish would do one coat finishes on Maple. Something I am messing around with when I feel the urge. Which is not very often.

I use Chambers oil as the medium with the rottenstone. I use a felt pad about 1" X 2" X 1/2" and dip it into the oil then I touch it to a small amount of rottenstone. I then work a small area of the stock wiping off the oil/rottenstone often to see that I did not cut the finish down to bare wood.
This stock was stained with EK's Aqua Fortis and finished with 6 coats of True Oil. Works for me ;D
