My understanding is that it was his father, Phillip, who as an orphan was bound out to Unkafare in the 1760s (at the partial direction of George Shroyer). Phillip Sheetz lived in the Little Conewago settlement located between present day Gettysburg and Hanover in Adams (then York) County. He finsihed his apprenticeship and then moved, along with a lot of other German and Low Dutch settlers from that area, to Shepherdstown/Berkely County VA (now West VA) - by around 1770 give or take. He apparently rejoined his older brother Henry in the gunmaking business there until his death around 1793. Phillip's sons included Martin and John Jacob Sheetz, both well known gunsmiths. Their family did wonderful work.
