Anyone here ever build with cherry instead of say curly maple?

Several times.  There can be big differences in cherry.  Seems like even in the same piece.
Funny you should post this.  I just started carving on a cherry stock today.  After just finishing a hard maple stock on Friday.  WOW!!  What a difference.  Gotta really stay extra sharp and be careful.  But it makes beautiful stocks.
And, It's what I have, so I use it the most

Cherry isn't just like other woods.  Some are harder and tighter grained, some are soft and pithy.
I've had both.  A piece of hard cherry with some nice rope figure is BEAUTIFUL!

Welcome Barry.  Hang around and read some stuff. Cherry guns can be devastatingly beautiful or not-so-much if the grain is flat. Lots and lots of guns are made in Cherry. I've got a blank of it on hand.

Also used pretty often are Walnut and Ash. Ash is for those seeking a challenge.

cherry was traditionally used in making wood bodied levels because of it's stability.
