You can keep the edges sharp by block sanding the tops of the lock panels as one of the last steps before finishing the stock. This can make them a little wider depending on how much wood you've left for sanding so don't forget to allow for that. Be sure to sand all the way down to the edge of the bevel on the lock plate, if the plate has a bevel.

Wouldn't filing the panel give you a better edge than sandpaper?
