A few suggestions from just glancing at your listed process...
*I would recommend dying your thread prior to stitching if you want to use a color.
* I would suggest learning to use an awl with pricking iron/wheel or even an overstitch wheel as opposed to the punch thru Asian stitching chisels if you get bitten by the leather bug and you decide to make more things
