Usually a gun takes me so long, that by the time it's done, I've forgotten all the mistakes!

Well $#*!, all you need do is drag the beastie in to Chuck's Fair and they will find them all (and then some). ;D

It's one gun at a time for me.  But I have realized there are times when I best step away from that !@*#^? gun until I regain my composure.  

So, my backup projects are powder horns and horn containers, and playing with lathe turning horn tips and antler into useful things.

Some mistakes you cover up, some you live with.  Most are more noticable to yourself than others.  Old slabsides should still be a usable, not totally unattrative gun when finished.  I got in a hurry and did too many things before I noticed the error.  I have built one gun and almost finished another before coming back to the 20 ga, and am more enthused about it.  Not all guns we build are candidates for Dixon's fair anyway.

Seem to have three or four going at a time. Occasionally one gets done!
