I mostly use a mallet. I don't have the feel or confidence to push the U/V around the turns, so I use a light mallet, and tap dance around the turns. For that I prefer the longer tools.  The only time I use the palm tools is to model surfaces of the relief carving with light paring cuts, as in hollowing out leaves, rounding over stems, etc.
