Type of stock blank cut for different style rifles

Should a person use a different cut, (quarter saw-slab saw) when making a rifle with more stock drop as in Bedford County, Allentown-Bethleham, or some of the French smooth bore style guns. If so why?

I don't think it matters as long as the grain running through the wrist and toe is ok.
