I see a lot of really neat hats for the 18th century period- who makes them non military hats like the long hunter would wear? Like the brown wide brim style? The Great Pinyone

Clearwater makes a fine hat, but pricey. There are several places that sell various quality "hat blanks" that work for 18th cent--you get what you pay for. The hat blank can be made into a tricorn or widebrim slouch hat whatever you prefer and typically cost far less than the better known hatters supply. I bought a cheap one mail order early on and then a good blank at a rondy--the difference is in the weight of the felt--and composition--you'll pay alot more for a good beaver than for a good sheep wool felt...
